1. Cook the Rice
In a medium saucepan, combine jasmine rice and water. Bring to a boil over medium-high heat. Once boiling, reduce to low heat, cover, and simmer for 15 minutes or until water is absorbed. Remove from heat and let it sit covered for 5 minutes.
2. Sauté Vegetables
In a large skillet, heat olive oil over medium heat. Add sliced green onions and sauté for about 2 minutes until fragrant. Then, add green peas and cook for another 3-4 minutes until tender.
3. Combine Ingredients
Fluff the cooked jasmine rice with a fork and add it to the skillet with the sautéed vegetables. Stir in chopped cilantro, lime juice, salt, and black pepper. Mix well to combine all flavors.
4. Serve
Remove from heat and serve warm as a side dish or a light main course.
