    Prepare the Dough

    In a large bowl, combine warm water and yeast. Let it sit for about 5-10 minutes until frothy. Add flour, salt, and 1/2 cup of olive oil. Mix until you form a dough.

    Knead the Dough

    Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth and elastic. Place in a greased bowl, cover, and let rise in a warm place for 1 hour, or until doubled in size.

    Shape the Focaccia

    Once risen, punch down the dough and transfer it to a greased baking sheet or pan. Press it out gently into a rectangle or circle about 1/2 inch thick.

    Add Toppings

    Drizzle the remaining olive oil and red wine vinegar over the dough. Use your fingers to create dimples all over the surface. Sprinkle Grana Padano cheese, rosemary (if using), and coarse sea salt on top.

    Final Rise

    Cover with a kitchen towel and let it rise for another 30 minutes.

    Bake the Focaccia

    Preheat your oven to 425°F (220°C). Bake for 20-25 minutes or until golden brown. Remove from the oven and let it cool slightly before serving.
