    Prepare the Bread

    Preheat your oven to 180°C (350°F). Slice the porcini sourdough bread into 1/2 inch thick slices and arrange them on a baking sheet.

    Add Olive Oil

    Brush each slice of bread lightly with olive oil on both sides.

    Toast the Bread

    Place the baking sheet in the oven and toast the bread for about 10-12 minutes, or until golden and crispy. Remove from the oven and let cool slightly.

    Sauté the Mushrooms

    In a skillet, heat 1 tablespoon of olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant. Add chopped mushrooms and fresh thyme, and cook for about 5-7 minutes, or until the mushrooms are tender. Season with salt and pepper to taste.

    Assemble the Crostini

    Place a spoonful of the sautéed mushrooms on each toasted slice of bread. Top each with a slice of Taleggio cheese.

    Final Bake

    Return the assembled crostini to the oven for an additional 5 minutes, or until the cheese is melted and bubbly.

    Remove from the oven, let cool for a minute, and serve warm.
