Preparation
1. Make the Meatballs
In a large bowl, combine ground veal, breadcrumbs, egg, minced garlic, chopped parsley, salt, black pepper, and grated Parmesan cheese. Mix until well combined. Form into meatballs about the size of a golf ball.
2. Cook the Meatballs
Heat a large skillet over medium heat and add a little olive oil. Add the meatballs and cook until browned on all sides and cooked through, about 12-15 minutes. Remove from skillet and set aside.
3. Prepare the Crushed Tomato Sauce
In the same skillet, add olive oil and sauté the chopped onion and minced garlic until translucent. Add crushed tomatoes, basil, salt, and black pepper. Simmer for 15 minutes.
4. Combine Meatballs and Sauce
Return the meatballs to the skillet with the sauce and simmer for an additional 5 minutes.
5. Make the Polenta
In a saucepan, bring water and salt to a boil. Slowly whisk in polenta and reduce heat. Cook, stirring frequently, until thickened, about 5-7 minutes. Stir in grated Parmesan cheese.
6. Serve
On a plate, serve a portion of polenta topped with the veal meatballs and crushed tomato sauce. Garnish with additional Parmesan cheese if desired.
