Prepare the Porchetta
Preheat your oven to 300°F (150°C). Score the skin of the pork belly and season it generously with salt and black pepper. Rub the minced garlic and chopped rosemary into the meat.

Roast the Pork
Roll the pork belly tightly and tie it with kitchen twine. Place it in a roasting pan and roast in the oven for about 3 hours, or until the internal temperature reaches 190°F (88°C) and the skin is crispy.

Sauté the Spinach
In a large skillet, heat the olive oil over medium heat. Add the spinach and sauté until wilted, about 3-4 minutes. Season with salt and pepper to taste.

Make the Rosemary-Garlic Aioli
In a bowl, combine the mayonnaise, minced garlic, chopped rosemary, and lemon juice. Mix well and season with salt and pepper to taste.

Assemble the Sandwich
Slice the roasted porchetta and layer it on the sesame rolls. Add provolone cheese, sautéed spinach, and a generous dollop of the rosemary-garlic aioli.

Serve the porchetta sandwiches immediately while warm.
