Prepare the Potatoes
Wash and peel the russet potatoes. Cut them into fry shapes, about 1/4 inch thick.

Soak the Fries
Soak the cut fries in cold water for at least 30 minutes to remove excess starch. Drain and pat dry.

Preheat the Oven
Preheat your oven to 425°F (220°C).

Coat the Fries
In a large bowl, toss the fries with garlic oil, salt, and pepper until well coated.

Bake the Fries
Spread the fries in a single layer on a baking sheet lined with parchment paper. Bake for 25-30 minutes, flipping halfway through, until golden and crispy.

Add Parmesan
Remove fries from the oven and immediately sprinkle with grated Parmesan cheese and optional fresh parsley. Toss gently to combine.
