Pound the chicken cutlets to an even thickness. Season with salt and pepper. Dredge in flour, dip in beaten egg, and coat with breadcrumbs. Heat oil in a skillet over medium heat and cook the chicken cutlets until golden brown and cooked through, about 4-5 minutes per side. Remove and let rest.

Chop the romaine lettuce and place it in a large salad bowl. Dice the tomato and cucumber, and thinly slice the red onion. Add these to the bowl along with crumbled gorgonzola and crispy pancetta.

In a small bowl, mix together mayonnaise, sour cream, minced fresh herbs (like parsley, chives, and dill), lemon juice, salt, and pepper to taste. Adjust consistency with a bit of milk if needed.
