Prepare the Duxelle
In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the finely chopped mushrooms and sauté until they release their moisture and become golden brown, about 5-7 minutes. Stir in minced garlic and cook for another 2 minutes. Season with salt and pepper. Remove from heat and set aside.

Grill the Chicken
Preheat a grill or grill pan over medium-high heat. Brush the chicken breasts with olive oil and season with salt and pepper. Grill the chicken for about 6-7 minutes on each side, or until fully cooked and internal temperature reaches 165°F (75°C).

Assemble the Sandwich
Once the chicken is cooked, place it on a brioche roll. Top each piece of chicken with a generous amount of mushroom duxelle, fresh spinach, and a slice of fontina cheese. Close the sandwich with the other half of the brioche roll.

You can serve the grilled chicken sandwich with garlic aioli on the side for dipping or drizzling.
