    Prepare the Oven

    Preheat the oven to 400°F (200°C).

    Prepare the Potatoes and Onions

    In a baking dish, toss the diced potatoes and sliced onions with olive oil, salt, and pepper. Roast in the preheated oven for 20 minutes.

    Prepare the Salmon

    While the potatoes are roasting, season the salmon fillets with salt and pepper. In a separate bowl, mix the herbed breadcrumbs with melted butter and lemon juice.

    Add the Salmon

    After the potatoes have roasted for 20 minutes, remove the baking dish from the oven. Place the salmon fillets on top of the potatoes and onions. Spoon the breadcrumb mixture over each fillet.

    Add Wine and Spinach

    Pour the white wine around the salmon and add the fresh spinach on top.

    Bake

    Return the dish to the oven and bake for an additional 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.

    Remove from the oven, let it rest for a few minutes, and serve warm.
