    Prepare Hummus

    In a food processor, combine 1 can of drained chickpeas, 1/4 cup tahini, 2 tablespoons olive oil, the juice of 1 lemon, 2 cloves of garlic, and salt to taste. Blend until smooth and creamy.

    Prepare Tabbouleh

    In a bowl, mix 1 cup of finely chopped parsley, 1/2 cup of diced tomatoes, 1/4 cup of finely chopped onion, 1/4 cup of bulgur wheat (soaked in water), and the juice of 1 lemon. Season with salt and pepper.

    Prepare Grape Leaves

    Using pre-cooked grape leaves, fill each leaf with a spoonful of rice mixture (rice, herbs, and spices). Roll tightly and place in a pot with water to steam for about 30 minutes.

    Prepare Fattoush Salad

    In a large bowl, combine 2 cups of mixed greens, 1 cup of chopped tomatoes, 1 cucumber (diced), radishes (sliced), and toasted pita pieces. Drizzle with olive oil and lemon juice.

    Prepare Baba Ghanoush

    Roast 1 large eggplant over an open flame until charred. Scoop out the flesh and blend it with 1/4 cup tahini, the juice of 1 lemon, 2 cloves of garlic, and salt to taste until smooth.
