Falafel Preparation

Prepare the Falafel Mixture

In a food processor, combine the canned chickpeas, parsley, onion, garlic, cumin, coriander, baking powder, flour, salt, and black pepper. Pulse until the mixture is well combined but still slightly chunky. Transfer the mixture to a bowl and refrigerate for at least 30 minutes.

Form the Falafel Balls

Once the mixture is chilled, shape it into small balls or patties, about 1.5 inches in diameter.

Fry the Falafel

In a large skillet or deep fryer, heat the oil over medium heat. Fry the falafel balls in batches until golden brown and crispy, about 3-4 minutes per side. Remove and drain on paper towels.

Assemble the Sandwich

Warm the pita bread slightly, then stuff each with a few falafel balls, shredded lettuce, sliced tomato, cucumber, and drizzle with tahini sauce.

Serve

Serve the falafel sandwich warm, with extra tahini sauce on the side if desired.
