Marinate the Meat

In a large bowl, combine the beef, lamb, minced garlic, ground cumin, ground coriander, paprika, ground cinnamon, black pepper, salt, olive oil, and white vinegar. Mix well to coat the meat thoroughly. Cover and marinate in the refrigerator for at least 1 hour, preferably overnight.

Prepare the Vertical Broiler

If using a vertical broiler, preheat it according to the manufacturer's instructions. If not, prepare a grill or oven.

Cook the Meat

Skewer the marinated meat onto the vertical broiler or place it on the grill. Cook for about 20-30 minutes, turning occasionally, until the meat is cooked through and has a nice char.

Slice the Meat

Once cooked, remove the meat from the broiler and let it rest for a few minutes. Slice the meat thinly against the grain.

Assemble the Shawarma

Warm the pita bread. Place a generous amount of sliced meat on each pita. Top with sliced tomatoes, cucumbers, onions, chopped parsley, and a drizzle of yogurt.

Serve

Serve immediately with additional yogurt on the side.
