    Prepare the Peppers

    Preheat your oven to 375°F (190°C). Slice the tops off the banana peppers and remove the seeds. Set aside.

    Make the Filling

    In a skillet, cook the Italian sausage over medium heat until fully browned. In a mixing bowl, combine the cooked sausage, cream cheese, mozzarella, parmesan, and cheddar. Season with salt and black pepper to taste.

    Stuff the Peppers

    Fill each banana pepper with the sausage and cheese mixture, pressing down gently to pack the filling.

    Bake the Peppers

    Place the stuffed peppers in a baking dish and drizzle with olive oil. Cover with foil and bake for 25 minutes. Remove the foil and bake for an additional 10 minutes until the tops are golden and bubbly.

    Prepare Garlic Toast

    While the peppers are baking, toast garlic bread slices in a pan with a bit of olive oil until golden brown on both sides.

    Fry the Eggs

    In a separate skillet, fry the eggs to your liking (sunny side up or over easy) with a little olive oil.

    Serve

    Once the peppers are done, serve them hot with garlic toast on the side and a fried egg on top of each stuffed pepper.
