Pork Ragu Ingredients

Method

Cooking Instructions

  1. 1

    Cook the Pasta

Bring a large pot of salted water to a boil. Add rigatoni pasta and cook according to package instructions until al dente. Drain and set aside.

  2. 2

    Prepare the Ragu

In a large skillet or saucepan, heat olive oil over medium heat. Add chopped onion, carrot, and celery. Sauté until the vegetables are soft, about 5 minutes.

  3. 3

    Add Garlic and Pork

Stir in minced garlic and ground pork. Cook until the pork is browned, breaking it apart with a wooden spoon.

  4. 4

    Deglaze and Simmer

Pour in the red wine, scraping up any brown bits from the bottom of the pan. Allow the wine to reduce for about 3-5 minutes.

  5. 5

    Add Tomatoes and Seasonings

Add crushed tomatoes, oregano, basil, salt, and black pepper. Stir to combine and bring to a gentle simmer. Cook for 30-40 minutes, stirring occasionally.

  6. 6

    Combine with Pasta

Once the ragu is thickened and flavors melded, combine it with the cooked rigatoni. Toss to coat the pasta in the sauce.

  7. 7

    Serve

Serve hot, topped with grated Parmesan cheese and chopped parsley.
