    Brown the Meat

    In a large pot or Dutch oven, heat olive oil over medium-high heat. Season the beef chuck roast with salt and pepper and brown it on all sides. Remove the meat and set it aside.

    In the same pot, add chopped onion, garlic, carrots, and celery. Sauté until the onions are translucent and the vegetables are softened, about 5-7 minutes.

    Add Liquids and Seasonings

    Pour in the crushed tomatoes, beef broth, red wine, oregano, and return the browned beef to the pot. Bring to a simmer.

    Cover the pot and reduce the heat to low. Let it braise for about 3 hours, or until the beef is tender and easily shredded.
