Method

Lamb Masala Preparation

    Cook the Lamb

    In a large pot, heat the oil over medium heat. Add the chopped onions and sauté until golden brown. Add the minced garlic and ginger, and sauté for another minute.

    Add Spices and Tomatoes

    Stir in the lamb masala spice mix, followed by the pureed tomatoes. Cook for 5-7 minutes until the mixture thickens.

    Add Lamb and Yogurt

    Add the lamb chunks to the pot, mix well, then add the yogurt and salt to taste. Stir to combine.

    Slow Cook

    Cover the pot and reduce the heat to low. Let it simmer for 1.5 to 2 hours, or until the lamb is tender. Stir occasionally and add water if needed.

    Garnish

    Once cooked, garnish with fresh coriander.

Jeera Rice Preparation

    Prepare the Rice

    In a pot, heat a small amount of oil and add cumin seeds. Once they start to sputter, add the rinsed basmati rice and stir for a minute.

    Cook the Rice

    Add water and salt, bring to a boil, then cover and reduce the heat to low. Cook for about 15-20 minutes until the rice is tender and water is absorbed.

Fried Onion Flakes Preparation

    Fry the Onions

    Heat oil in a pan and fry the sliced onions until they are golden brown and crispy. Remove and drain on paper towels.

Raita Preparation

    Mix the Raita

    In a bowl, combine yogurt, grated cucumber, chopped mint, and salt to taste. Mix well and refrigerate until serving.
