Method
Preparation of Chutneys

Green Chutney
In a blender, combine fresh coriander leaves, mint leaves, green chili, lemon juice, and salt. Blend until smooth. Adjust seasoning if needed.

Sweet & Sour Chutney
In a saucepan, combine tamarind pulp, grated jaggery, water, salt, and chili powder. Cook on medium heat until jaggery dissolves and the mixture thickens slightly. Let it cool.
Fryums and Papadum

Fry the Fryums
Heat oil in a deep frying pan. Fry the fryums until they puff up and turn golden brown. Remove and place on a paper towel to drain excess oil.

Cook the Papadum
You can either roast the papadum directly over a flame until crispy or fry them in hot oil for a few seconds until golden.
Serving

Arrange the fried fryums and papadum on a platter. Serve with green chutney and sweet & sour chutney on the side.
