    Wash and chop the mixed vegetables into bite-sized pieces. Blanch them in boiling water for 2-3 minutes, then drain and allow to cool.

    In a dry pan, lightly roast the mustard seeds and fenugreek seeds until fragrant. Let them cool and then grind to a coarse powder.

    In a large mixing bowl, combine the cooled vegetables with the ground spices, turmeric powder, red chili powder, salt, sugar, vinegar, and mustard oil. Mix well to ensure the vegetables are evenly coated.

    Transfer the mixture into sterilized glass jars. Pack tightly and pour any remaining liquid over the top to fully submerge the vegetables.

    Cure the Achar

    Seal the jars and leave them at room temperature for 3-5 days to ferment. Shake the jars gently every day to mix the spices.
