    Cook Quinoa

    Rinse the quinoa under cold water. In a medium saucepan, combine quinoa and water. Bring to a boil, then reduce to a simmer, cover, and cook for 15 minutes or until water is absorbed. Remove from heat and let it sit covered for 5 minutes. Fluff with a fork.

    Prepare Vegetables

    While the quinoa is cooking, prepare the charred corn, diced tomatoes, chopped onion, and chopped huacatay. If using fresh corn, grill or roast it until charred, then cut the kernels off the cob.

    Combine Ingredients

    In a large bowl, combine the cooked quinoa, black beans, charred corn, diced tomatoes, chopped onion, and crumbled queso fresco.

    Dress the Salad

    In a small bowl, whisk together lime juice, olive oil, salt, and black pepper. Pour the dressing over the salad and toss gently to combine.

    Serve

    Garnish with additional huacatay if desired. Serve chilled or at room temperature.
