Prepare the Ingredients
Clean and slice the mushrooms. Dice the onion and red bell pepper, and mince the garlic.
Sauté the Vegetables
In a large skillet, heat olive oil over medium heat. Add the onion and garlic, and sauté until the onion becomes translucent, about 3-4 minutes.
Cook the Mushrooms
Add the sliced mushrooms and red bell pepper to the skillet. Cook for another 5-7 minutes, stirring occasionally, until the mushrooms release their moisture and start to brown.
Add the Cream and Spices
Stir in the vegetable broth, heavy cream, and aji amarillo paste. Season with salt and black pepper to taste. Bring to a simmer and let it cook for about 5 minutes until the sauce thickens slightly.
Cook the Rice
While the sauce is simmering, prepare the rice according to package instructions.
Serve
Serve the creamy mushroom sauce over the rice and garnish with chopped cilantro.
