1. Prepare the Base
In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic, sauté until the onion is translucent.
2. Add Lentils and Broth
Stir in the red lentils and cook for 1-2 minutes. Pour in the vegetable broth and bring to a boil.
3. Add Peppers and Seasoning
Once boiling, lower the heat and add diced aji peppers, salt, and black pepper. Let it simmer for 20-25 minutes or until lentils are tender.
4. Blend the Soup
Remove the pot from heat. Use an immersion blender to blend the soup until smooth. You can also transfer to a blender in batches.
5. Finish with Coconut Milk
Stir in the coconut milk and lime juice. Heat through for another 5 minutes.
6. Serve
Garnish with fresh cilantro before serving. Enjoy!
