    Prepare the Chicken

    In a pot, boil the chicken breasts in salted water until fully cooked, about 20 minutes. Remove the chicken, shred it, and set aside.

    Make the Sauce

    In a pan, heat olive oil over medium heat. Sauté the chopped onion and minced garlic until translucent. Add ají amarillo paste and cook for another 2 minutes.

    Blend the Ingredients

    In a blender, combine the sautéed mixture, shredded chicken, evaporated milk, chicken broth, bread, and walnuts. Blend until smooth.

    Cook the Stew

    Pour the blended mixture back into the pan. Season with salt and pepper. Let it simmer for 10 minutes on low heat, stirring occasionally.

    Prepare the Rice

    While the stew is simmering, cook the rice according to package instructions.

    Serve the ají de gallina over a bed of rice, garnished with sliced boiled eggs and black olives.
