Prepare the Ingredients

Thinly slice the teres major beef against the grain. Cut the red onion and roma tomatoes into strips. Remove the seeds from the yellow pepper and slice it thinly. Mince the garlic cloves.

Cook the Rice

In a pot, boil 4 cups of water. Add 2 cups of white rice, a pinch of salt, and cook according to package instructions until tender.

Stir Fry the Beef

In a large skillet or wok, heat 2 tablespoons of olive oil over high heat. Add the sliced beef and season with salt and black pepper. Stir fry for about 3-4 minutes until browned. Remove the beef from the skillet and set aside.

Sauté the Vegetables

In the same skillet, add 1 tablespoon of olive oil. Add minced garlic, red onion, yellow pepper, and sauté for about 2-3 minutes until the onion is translucent.

Combine and Finish

Add the roma tomatoes to the skillet, followed by the beef, soy sauce, and red wine vinegar. Stir everything together and cook for another 2-3 minutes, allowing the flavors to meld.

Serve

Serve the beef stir fry over the cooked white rice and garnish with chopped cilantro.
