Prepare the Ingredients
Slice the chicken breast into strips, and chop the red onion, bell pepper, and tomato into bite-sized pieces. Mince the garlic.

Cook the Chicken
In a large skillet or wok, heat 2 tablespoons of vegetable oil over medium-high heat. Add the chicken strips and season with salt and pepper. Stir-fry until the chicken is cooked through and golden brown, about 5-7 minutes. Remove the chicken from the skillet and set aside.

Combine Ingredients
Add the cooked chicken back into the skillet with the sautéed vegetables. Add the soy sauce, vinegar, and chopped tomato. Stir everything together and cook for an additional 2-3 minutes, allowing the flavors to meld.

Remove from heat and stir in the chopped cilantro. Adjust seasoning with salt and pepper if necessary.
