Prepare the Filling
In a large bowl, combine the chopped cabbage, grated carrot, chopped mushrooms, green onions, minced garlic, grated ginger, soy sauce, sesame oil, salt, and pepper. Mix well until all ingredients are evenly incorporated.
Assemble the Gyoza
Take a gyoza wrapper and place a small spoonful of the vegetable filling in the center. Moisten the edges of the wrapper with water, fold it in half, and pinch the edges to seal tightly. Repeat this process for all wrappers and filling.
Cook the Gyoza
Heat a non-stick skillet over medium heat and add a little oil. Place the gyoza in the skillet, flat side down, and cook for about 2-3 minutes until the bottoms are golden brown. Add a small amount of water (enough to cover the bottom of the pan) and cover immediately. Allow to steam for about 5-7 minutes until the water has evaporated and the gyoza are cooked through.
Serve
Remove the gyoza from the skillet and serve hot with soy sauce or your favorite dipping sauce.
