Marinate the Chicken

In a bowl, combine the soy sauce, sesame oil, minced garlic, and ginger. Add the boneless chicken thighs and let marinate for at least 30 minutes.

Prepare the Grill or Pan

Heat a large teppanyaki grill or a non-stick pan over medium-high heat. Add a little sesame oil to coat the surface.

Cook the Chicken

Remove the chicken from the marinade (reserve the marinade) and place it on the grill. Cook for about 5-7 minutes on each side or until the chicken is fully cooked and has nice grill marks.

Add Vegetables

Once the chicken is cooked, add the sliced bell peppers, zucchini, carrots, and green onions to the grill. Stir-fry the vegetables for about 3-5 minutes until tender-crisp.

Finish with Sauce

Pour the reserved marinade over the chicken and vegetables, and let it simmer for an additional minute.

Serve

Remove from heat, sprinkle with sesame seeds and freshly ground black pepper. Serve hot.
