Sear the Beef

In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the beef cubes and season with black pepper. Sear the beef until browned on all sides, about 5-7 minutes. Remove beef and set aside.

Sauté Aromatics

In the same pot, add minced garlic and ginger. Sauté for about 1-2 minutes until fragrant, being careful not to burn them.

Cook the Stew

Return the beef to the pot, and add chicken broth and soy sauce. Bring to a boil, then reduce heat and let simmer for about 1 hour, or until the beef is tender.

Add Greens and Noodles

About 10 minutes before the stew is done, add the seasoned greens and ramen noodles to the pot. Cook until the noodles are tender.

Finish and Serve

Ladle the beef stew ramen into bowls, and top with sliced radish and chopped scallions. Serve hot.
