Prepare the Pork Belly
Preheat the oven to 150°C (300°F). Score the skin of the pork belly in a crisscross pattern. In a bowl, mix the soy sauce, brown sugar, minced garlic, grated ginger, and rice vinegar. Rub the marinade all over the pork belly and let it sit for at least 30 minutes.

Roast the Pork Belly
Place the marinated pork belly on a roasting pan and cover it with foil. Roast in the preheated oven for about 2 to 2.5 hours, until tender. Remove the foil and increase the temperature to 220°C (425°F) for an additional 20-30 minutes to crisp the skin.

Prepare the Buns
While the pork is roasting, steam the bao buns according to package instructions. This usually takes about 10-15 minutes.

Assemble the Buns
Once the pork belly is done, let it rest for about 10 minutes before slicing. Slice the pork belly into thin pieces. To assemble, place a slice of pork belly in each steamed bun, top with sliced cucumber, fresh cilantro leaves, and a drizzle of sesame oil.
