Prepare the Pork

Cut the pork belly into small bite-sized pieces. Season with fish sauce and set aside for about 15 minutes.

Crispy Rice Preparation

In a pan, heat oil over medium heat. Add the cooled, cooked rice and fry until crispy and golden brown. Remove from heat and set aside.

Cook the Pork

In the same pan, add a bit more oil if needed and add the seasoned pork belly. Cook until crispy and browned on all sides, about 8-10 minutes.

Add Aromatics

Add ginger, garlic, and shallots to the pan with the pork. Stir-fry for 2-3 minutes until fragrant.

Combine Ingredients

Add the crispy rice to the pork and stir to combine. Toss in the Thai chilies, cilantro, sawtooth herb, and green onions. Mix well.

Finish and Serve

Squeeze lime juice over the mixture, stir again, and serve hot, garnished with extra herbs if desired.
