Prepare the Ingredients
Slice the smoked beef brisket into bite-sized pieces. Cut the apple eggplant into quarters and set aside. Wash the Thai basil and lime leaves.
Cook the Beef
In a large pan, heat some oil over medium heat. Add the smoked beef brisket and sauté until browned and heated through, about 5-7 minutes.
Add the Eggplant
Add the quartered apple eggplant to the pan and cook for another 5 minutes until they start to soften.
Add Flavor
Add the lime leaves and half of the Thai basil to the pan. Stir well to combine and allow the flavors to meld for about 3 minutes.
Finish and Serve
Remove from heat, plate the curry, and garnish with the remaining Thai basil and crispy shallots. Serve hot.
