Marinate the Chicken

In a large bowl, combine coconut milk, fish sauce, brown sugar, minced garlic, galangal, kaffir lime leaves, lime juice, and black pepper. Stir well to combine. Add the chicken halves, ensuring they are well coated in the marinade. Cover and refrigerate for at least 2 hours, or overnight for best flavor.

Prepare the Grill

Preheat your grill to medium-high heat. If using a charcoal grill, ensure the coals are glowing and hot.

Grill the Chicken

Remove the chicken from the marinade, allowing excess marinade to drip off. Place the chicken skin side down on the grill. Grill for about 25-30 minutes, turning occasionally, until the skin is crispy and the internal temperature reaches 165°F (75°C).

Serve

Remove the chicken from the grill and let it rest for 5 minutes before cutting. Serve the grilled chicken with sides of sweet chili garlic sauce and tamarind chili sauce.
