    Prepare the Ribs

    Preheat your oven to 160°C (320°F). Season the pork ribs with salt, black pepper, and thyme.

    Sear the Ribs

    In a large oven-safe pot, heat the olive oil over medium-high heat. Sear the ribs on all sides until browned, about 8-10 minutes. Remove the ribs and set aside.

    Sauté Vegetables

    In the same pot, add chopped onion and minced garlic. Sauté until the onion is translucent, about 5 minutes. Add chopped carrots and potatoes, cooking for another 5 minutes.

    Deglaze the Pan

    Pour in the red wine and scrape up any browned bits from the bottom of the pot. Let it simmer for 2-3 minutes.

    Braise the Ribs

    Return the ribs to the pot and add chicken broth and bay leaves. Bring to a boil, then cover and transfer to the preheated oven.

    Cook

    Braise in the oven for 2-2.5 hours, or until the ribs are tender and the meat is falling off the bone.

    Serve

    Remove from the oven, discard bay leaves, and serve the ribs with the root vegetables.
