1. Prepare the Ginger Extract

Peel and chop the fresh ginger root into small pieces. In a saucepan, combine the chopped ginger, 500 ml of water, and sugar. Bring to a boil, then reduce heat and simmer for about 30 minutes to extract the flavors.

2. Strain the Mixture

After simmering, strain the ginger mixture through a fine sieve or cheesecloth into a large mixing bowl. Discard the solid ginger pieces.

3. Combine Ingredients

Add the remaining 500 ml of water, lemon juice, lime zest, and yeast to the ginger extract. Stir well to combine.

4. Ferment

Cover the bowl with a clean cloth and let it sit at room temperature for 24-48 hours. This allows the yeast to ferment and carbonate the mixture.

5. Bottle the Ginger Beer

Once fermented, carefully pour the ginger beer into clean bottles, leaving some space at the top. If desired, add additional ginger slices to each bottle for extra flavor.

6. Cap and Store

Seal the bottles tightly and store them in a cool, dark place for another 3-7 days to develop carbonation. Check daily to ensure they are not over-carbonating.

7. Chill and Serve
