    Prepare the vegetables

    Wash and chop all the vegetables into bite-sized pieces. Set aside.

Cooking

    Sauté onions and spices

    In a large pot, heat the oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Stir in the minced garlic, grated ginger, cayenne pepper, turmeric, cumin seeds, and salt. Cook for an additional 2 minutes until fragrant.

    Add tomato puree

    Pour in the tomato puree and stir well to combine with the onion and spices. Cook for about 5 minutes, allowing the mixture to thicken slightly.

    Add vegetables

    Add the prepared cauliflower, green beans, carrot, potato, and bell pepper to the pot. Stir well to coat the vegetables in the sauce.

    Simmer

    Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 20-25 minutes, or until the vegetables are tender.

    Finish with garam masala

    Once the vegetables are cooked, stir in the garam masala and adjust seasoning with salt if necessary. Cook for an additional 5 minutes.
