Chop the Onion and Tomato
Finely chop the onion and tomato. Set aside.
Cooking

Heat the Oil
In a large pan, heat the cooking oil over medium heat.

Sauté Ajwain and Onions
Add the ajwain seeds to the hot oil and sauté for a few seconds until they start to crackle. Add the chopped onions and sauté until they turn golden brown.

Add Ginger-Garlic Paste and Tomatoes
Stir in the ginger-garlic paste and cook for 1-2 minutes. Add the chopped tomato and cook until it softens.

Mix in Spices
Add turmeric powder, red chili powder, and salt. Stir well to combine.

Simmer
Pour in the water, stir, and bring to a boil. Reduce the heat to low, cover the pan, and let it simmer for about 15-20 minutes or until the vegetables are tender.

Finish with Garam Masala
Once the vegetables are cooked, sprinkle garam masala over the top, stir gently, and cook for an additional 2 minutes.

Remove from heat and let it rest for a few minutes before serving. Serve hot with rice or roti.
