Preparation

    Prepare the Ingredients

    Wash and chop the mixed vegetables, bell pepper, and onion. Set aside.

    Prepare the Sauce

    Puree the tomatoes in a blender until smooth and set aside.

Cooking

    Cook the Onions and Spices

    In a large pan, heat the vegetable oil or ghee over medium heat. Add cumin seeds and let them splutter. Then add the chopped onions and sauté until they turn golden brown.

    Add Ginger-Garlic Paste

    Add ginger-garlic paste and sauté for about 1-2 minutes until the raw smell disappears.

    Add Vegetables

    Add the mixed vegetables and bell pepper to the pan. Stir well and cook for about 5 minutes, allowing them to soften slightly.

    Add Tomato Puree and Spices

    Pour in the tomato puree and add turmeric powder, red chili powder, and salt. Stir well to combine and let it cook for another 5-7 minutes.

    Finish with Cream and Garam Masala

    Reduce the heat to low and add the cream and garam masala. Mix well and let it simmer for 5 minutes until the sauce thickens.
