Vegetable Fried Rice Recipe

Prepare the Rice

    Rinse the Rice

    Rinse 1 cup of basmati rice under cold water until the water runs clear to remove excess starch.

    Cook the Rice

    In a pot, combine the rinsed rice and 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until the rice is tender and water is absorbed. Remove from heat and let it sit covered for an additional 5 minutes.

Prepare the Vegetables

    Chop the Vegetables

    Dice the carrots and bell pepper, and chop the green onions. Mince the garlic and ginger.

Stir-Fry

    Heat the Oil

    In a large skillet or wok, heat 2 tablespoons of vegetable oil over medium-high heat.

    Cook the Eggs (if using)

    Add the beaten eggs to the skillet and scramble until cooked through. Remove from the skillet and set aside.

    Stir-Fry Vegetables

    Add the minced garlic and ginger to the skillet, and stir for about 30 seconds until fragrant. Then add the diced carrots, bell pepper, and frozen green peas. Stir-fry for 3-5 minutes until the vegetables are tender.

    Add Rice and Seasonings

    Add the cooked basmati rice to the skillet along with the soy sauce, sesame oil, salt, and black pepper. Stir well to combine and heat through for about 2-3 minutes.

    Combine and Serve

    If using eggs, add them back to the skillet and gently mix. Serve hot, garnished with chopped green onions.
