Preparing the Batter

Soak the Ingredients
In a large bowl, combine rice, urad dal, and fenugreek seeds. Rinse them thoroughly and soak in water for at least 4-6 hours or overnight.

Blend the Batter
After soaking, drain the water and transfer the mixture to a blender. Add 3 cups of fresh water and blend until you achieve a smooth batter. The consistency should be similar to pancake batter.

Fermentation
Pour the batter into a large bowl, add salt, and mix well. Cover the bowl with a cloth and let it ferment in a warm place for 8-12 hours or until it doubles in size.

Heat the Pan
After fermentation, heat a non-stick skillet or cast iron pan over medium heat. Add a little oil to grease the surface.

Cook the Uttapam
Pour a ladleful of batter onto the skillet, spreading it slightly to form a thick pancake. Sprinkle a generous amount of the chopped vegetables on top. Drizzle a little oil around the edges.

Flip and Serve
Cook for 2-3 minutes or until the bottom is golden brown. Carefully flip the uttapam and cook the other side for another 2-3 minutes. Once done, remove from the skillet and repeat with the remaining batter and vegetables.
