Method
Marinade Preparation
- 1
Prepare the Marinade
In a large mixing bowl, combine the plain yogurt, tandoori spice mix, minced garlic, grated ginger, lemon juice, cooking oil, and salt. Mix well to create a smooth marinade.
- 2
Marinate the Chicken
Add the chicken wings to the marinade, ensuring they are well coated. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, preferably overnight for the best flavor.
Cooking
- 3
Prepare the Clay Oven
If using a clay oven, preheat it by lighting wood chips inside until they start to smoke. This usually takes about 15 minutes.
- 4
Cook the Chicken Wings
Once the clay oven is ready, place the marinated chicken wings on a skewer or directly on a grilling rack. Cook in the clay oven for about 20-25 minutes, turning occasionally, until the wings are cooked through and have a nice char.
- 5
Check for Doneness
Ensure the internal temperature of the chicken wings reaches at least 165°F (75°C). Remove from the oven and let them rest for a few minutes before serving.
