Soak Tamarind
In a bowl, soak the tamarind pulp in 2 cups of warm water for about 30 minutes. This will soften the pulp and help extract its flavor.

Extract Tamarind Juice
After soaking, use your hands to mash the tamarind pulp in the water, ensuring that all the pulp is dissolved. Strain the mixture through a fine sieve into a bowl, discarding any solids left behind.

Cook the Chutney
In a saucepan, combine the tamarind juice with jaggery (or brown sugar), salt, chili powder, cumin powder, black salt, grated ginger, and coriander powder.

Simmer
Bring the mixture to a boil over medium heat. Once boiling, reduce the heat and let it simmer for about 10-15 minutes, stirring occasionally, until it thickens to your desired consistency.

Cool and Store
Remove from heat and let the chutney cool. Once cool, transfer it to a clean jar and store in the refrigerator for up to 2 weeks.
