Marinade Preparation

Prepare the Marinade
In a large bowl, combine the Taj secret spice blend, yogurt, lemon juice, minced garlic, grated ginger, salt, and black pepper. Mix well to form a smooth marinade.

Marinate the Chicken
Add the chicken halves to the marinade and ensure they are well coated. Cover the bowl with plastic wrap and refrigerate for at least 4 hours, or preferably overnight for the best flavor.

Preheat the Oven
Preheat the clay oven or traditional oven to 400°F (200°C). If using a clay oven, ensure it is heated thoroughly.

Prepare the Chicken for Cooking
Remove the marinated chicken from the refrigerator. Drizzle olive oil over the chicken halves and rub it in gently.

Cook the Chicken
Place the chicken halves on a baking tray or directly on the rack in the clay oven. Cook for approximately 40-45 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the skin is golden brown and crispy.

Once cooked, remove the chicken from the oven and let it rest for 5 minutes. Garnish with fresh coriander before serving.
