Marinade Preparation

Prepare the Marinade
In a large bowl, combine yogurt, Taj secret spice mix, minced garlic, grated ginger, lemon juice, salt, black pepper, and olive oil. Mix well to create a smooth marinade.

Marinate the Chicken
Place the whole chicken into the marinade, ensuring it is thoroughly coated inside and out. Cover the bowl with plastic wrap and refrigerate for at least 4 hours, preferably overnight for best results.

Prepare the Clay Oven
Preheat your clay oven (tandoor) by adding wood or charcoal. Allow it to reach a high temperature (approximately 400°F or 200°C).

Cook the Chicken
Once the oven is ready, carefully place the marinated chicken on skewers or directly on the grill inside the clay oven. Cook for about 45-60 minutes, turning occasionally, until the chicken is golden brown and cooked through.

Ensure the internal temperature of the chicken reaches 165°F (75°C) by using a meat thermometer. If necessary, cook for additional time.

Once fully cooked, remove the chicken from the oven, let it rest for a few minutes, then garnish with fresh cilantro before serving.
