Spring Paneer Dosa Recipe

Prepare Dosa Batter

    Soak Ingredients

    In a bowl, soak rice, urad dal, and fenugreek seeds in water for at least 4-6 hours or overnight.

    Blend Batter

    Drain the soaked ingredients and blend them with 1 cup of fresh water until smooth. Transfer the batter to a large bowl.

    Ferment Batter

    Cover the batter with a cloth and let it ferment in a warm place for 8-12 hours or until it doubles in volume.

    Add Salt

    Once fermented, add salt to the batter and mix well. The batter should be of pouring consistency.

Prepare Filling

    Prepare Vegetables

    In a pan, heat oil over medium heat. Add grated carrot, chopped bell pepper, and green peas. Sauté for 3-4 minutes until slightly softened.

    Add Paneer and Spices

    Crumble paneer into the pan and add garam masala and salt. Mix well and cook for another 2-3 minutes. Finally, add chopped coriander leaves and mix again. Remove from heat.

Cook Dosa

    Heat Pan

    Heat a non-stick skillet or tawa over medium heat. Grease it lightly with oil.

    Pour Batter

    Pour a ladleful of dosa batter onto the center of the skillet and spread it into a circular shape, making it thin.

    Cook Dosa

    Cook until the edges start to lift and the bottom turns golden brown, about 2-3 minutes. Place a portion of the filling in the center of the dosa.

    Fold Dosa

    Fold the dosa over the filling and cook for another minute. Remove from skillet and keep warm.

    Repeat

    Repeat the process with the remaining batter and filling until all dosas are cooked.
