    Prepare the Shrimp

    Ensure that the shrimp are peeled and deveined. Rinse them under cold water and pat them dry with a paper towel.

    Chop Vegetables

    Finely chop the onion and tomato. Grate the ginger and mince the garlic.

Cooking

    Saute Onion and Spices

    In a large pan, heat the cooking oil over medium heat. Add the chopped onion and sauté until it becomes translucent. Add the grated ginger, minced garlic, and slit green chili, and sauté for another 2-3 minutes until fragrant.

    Add Tomatoes and Spices

    Stir in the chopped tomato, turmeric powder, coriander powder, and salt. Cook until the tomatoes soften, about 5 minutes.

    Add Coconut Milk

    Pour in the coconut milk and bring the mixture to a gentle simmer. Allow it to cook for about 5 minutes.

    Cook the Shrimp

    Add the shrimp to the pan and gently stir. Cook for about 5-7 minutes, or until the shrimp are pink and cooked through.

    Finish with Garam Masala

    Stir in the garam masala and let it cook for another minute. Adjust seasoning if necessary.

    Garnish and Serve

    Remove from heat, garnish with fresh coriander leaves, and serve hot with rice or naan.
