    Begin by gathering all the ingredients. Peel and devein the shrimp if not already done. Dice the raw mango and set aside. Finely chop the onion, mince the garlic, and grate the ginger.

    In a large skillet or saucepan, heat the vegetable oil over medium heat. Add the chopped onion and sauté until it becomes translucent, about 5 minutes. Stir in the minced garlic, grated ginger, and slit green chili, and cook for an additional 2 minutes until fragrant.

    Sprinkle the curry powder over the sautéed mixture and stir well, cooking for 1-2 minutes to toast the spices and enhance their flavor.

    Pour in the coconut milk and stir until combined. Allow the mixture to come to a gentle simmer.
