Method

Marinating the Shrimp

    Prepare the Marinade

    In a large bowl, combine sour cream, white pepper, ginger paste, garlic paste, lemon juice, and salt. Mix well until all ingredients are combined.

    Marinate the Shrimp

    Add the peeled and deveined shrimp to the marinade. Ensure each shrimp is coated well. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes.

Preparing the Vegetables

    Prep the Vegetables

    In a separate bowl, combine the bell peppers, zucchini, and red onion. Drizzle with olive oil, salt, and black pepper. Toss to coat evenly.

    Prepare for Grilling

    If using wooden skewers for the kebabs, soak them in water for about 15 minutes to prevent burning. Preheat the grill to medium-high heat.

Grilling

    Skewer the Shrimp and Vegetables

    Thread the marinated shrimp onto the skewers, alternating with the prepared vegetables.

    Place the skewers on the preheated grill. Cook for about 4-5 minutes on each side or until the shrimp are opaque and cooked through, and the vegetables are slightly charred.

Serving

    Remove the skewers from the grill and let them rest for a couple of minutes. Serve the shrimp malai kebabs hot with a side of your choice, such as naan or rice.
