Marinate the Lamb
Place the rack of lamb in a shallow dish and pour the marinade over it. Make sure the lamb is well-coated. Cover the dish with plastic wrap and refrigerate for at least 2 hours, preferably overnight for maximum flavor.

Preheat the Clay Oven
Preheat your clay oven (or conventional oven if clay oven is not available) to 400°F (200°C).

Cook the Lamb
Remove the lamb from the marinade and place it in the preheated clay oven. Cook for 25-30 minutes for medium-rare, or until the internal temperature reaches 145°F (63°C).

Rest the Lamb
Once cooked, remove the rack of lamb from the oven and let it rest for 10 minutes before slicing. This allows the juices to redistribute.

Serve
Slice the lamb between the bones and serve with your favorite sides.
