Method
Dosa Batter Preparation

Soak Ingredients
In a large bowl, soak the rice, split urad dal, and fenugreek seeds in water for at least 6-8 hours or overnight.

Blend Batter
After soaking, drain the water and transfer the soaked ingredients to a blender. Add 1.5 cups of fresh water and blend until you get a smooth batter. The batter should be of pouring consistency.

Ferment Batter
Transfer the batter to a large bowl, cover it with a cloth, and let it ferment in a warm place for 8-12 hours until it has risen and is slightly bubbly.

Add Salt
Once fermented, gently stir the batter and add salt. Mix well and set aside.
Coconut Chutney Preparation

Blend Chutney
In a blender, combine the fresh grated coconut, green chilies, ginger, salt, and water. Blend until smooth. Adjust water for desired consistency.
Tomato Chutney Preparation

Add Tomatoes
Add chopped tomatoes and salt. Cook until the tomatoes are soft and mushy.

Blend Chutney
Let the mixture cool and then blend until smooth. Adjust seasoning if necessary.
Sambar Preparation

Cook Toor Dal
Rinse the toor dal and cook it in a pressure cooker with 4 cups of water for about 4-5 whistles or until soft.

Cook Vegetables
In a separate pot, add mixed vegetables and enough water to cover. Cook until the vegetables are tender.

Combine Ingredients
Once the toor dal is cooked, mash it and add it to the pot of cooked vegetables. Stir in sambar powder, tamarind pulp, and salt. Add more water if necessary to achieve desired consistency.

Tempering
In a small pan, heat oil, add mustard seeds, and let them splutter. Add curry leaves and sauté for a few seconds. Pour this tempering over the sambar.
Dosa Cooking

Heat the Pan
Heat a non-stick skillet or tawa over medium heat. Once hot, reduce the heat to low.

Make Dosa
Pour a ladleful of batter onto the center of the skillet and spread it in a circular motion to form a thin crepe. Drizzle a little oil around the edges.

Cook the Dosa
Cook until the edges lift and the surface looks cooked, about 2-3 minutes. Flip and cook for another minute if desired.

Repeat the process with the remaining batter, adjusting heat as necessary.
