Preparation

    Soak Nuts

    Soak cashew nuts and almonds in warm water for about 30 minutes. This will help in blending them smoothly.

    Prepare Paneer

    Cut the paneer into cubes and set aside.

    Chop Vegetables

    Chop the onion and tomatoes finely. Slit the green chilies.

Making Gravy

    Blend Nuts

    In a blender, add the soaked cashew nuts and almonds. Blend to a smooth paste by adding a little water if necessary.

    Sauté Onions

    Heat the cooking oil in a pan over medium heat. Add the chopped onions and sauté until they turn golden brown.

    Add Ginger-Garlic

    Add the ginger-garlic paste and sauté for another minute until the raw smell disappears.

    Cook Tomatoes

    Add the chopped tomatoes and cook until they turn soft and mushy.

    Add Spices

    Stir in the turmeric powder, red chili powder, coriander powder, and salt. Mix well.

    Simmer Gravy

    Add the blended nut paste and coconut milk. Stir well and let it simmer for 5-7 minutes until the gravy thickens.

    Add Paneer

    Finally, add the paneer cubes and garam masala. Stir gently and cook for another 5 minutes.

    Garnish the dish with fresh coriander leaves and a drizzle of cream before serving.
