    Wash and Chop Spinach

    Thoroughly wash the fresh spinach under running water. Remove tough stems and chop the leaves coarsely.

    Prepare Vegetables

    If using potato, peel and chop it into small cubes. Prepare chickpeas if using dried ones by soaking and cooking them. Chop onion, tomato, garlic, and ginger finely.

    Sauté Base Ingredients

    In a pan, heat the oil over medium heat. Add cumin seeds and let them splutter. Then add the chopped onions and sauté until they are translucent.

    Add Garlic and Ginger

    Add the minced garlic and ginger to the pan, and sauté for 1-2 minutes until fragrant.

    Cook Tomatoes and Spices

    Add chopped tomatoes, turmeric powder, red chili powder, and salt. Cook until the tomatoes are soft and oil separates from the mixture.

    Add Spinach

    Stir in the chopped spinach and cook until wilted, about 5-7 minutes. Stir occasionally to ensure even cooking.

    Incorporate Protein Option

    Add your choice of protein (paneer, chickpeas, potato, or mixed vegetables). If using paneer, cut it into cubes and add it gently. Cook for another 5-10 minutes until everything is heated through.

    Finish with Garam Masala

    Sprinkle garam masala over the dish, mix well, and cook for an additional 2 minutes. Adjust salt if necessary.

    Serve

    Remove from heat and serve hot with rice or Indian bread (roti, naan).
